Alsace is a region marked by it's strong identity, fine arts, costumes, traditional French food and cuisine.
Beginning in 58 BC with the Romans, It became part of Germany during the 11th century, then, after the Thirty Years War, the peace agreement of 1648 saw the start of it's integration into France. But it wasn't until 1789, during The French Revolution, that the region became fully integrated into the French nation.
Alsatian cuisine still incorporates many Germanic traditions, renowned for both savoury and sweet dishes and is noted for the use of pork in many different forms. Traditional recipes include baeckeoffe, carpe frite, and choucroute.
From the Winegrowers of the Alsatian plains to the stone-built farms in the mountains and valleys, this is truly a region for the connoisseur.
Whether you visit a bierstub (a German-style tavern), or a winstub (wine bar), you’ll be surprised at the choice of dishes, from; savory and fruit tarts, stews of all types, salads with cheese and pork sausage, foie gras, quenelles, freshwater fish, snails and sauteed potatoes. The regional specialities offered at these traditional restaurants reflect the Alsacian love for sharing good things, which is typically French!
Choucroute Garnie - A famous recipe for sauerkraut (finely cut fermented cabbage) with sausages, cured meats and charcuterie.
Baeckeoffe (baker's oven) - A traditional Alsatian dish, marinated mutton, beef and pork, with mixed vegetables, a typical French peasants dish.

This is a traditional Alsatian “Winstub” restaurant situated in the heart of old Strasbourg. It has adopted the “Baeckeoffe d’alsace” as it’s speciality dish, and if you are ever in the region this is great place to discover Strasbourg hospitality, and this mythical dish.
